Abstract
The aim of this paper is to analyse the situation of the agriculture and livestock production in Gipuzkoa in the 16th and 17th centuries; during this period these activities changed deeply, giving to the sector new features, which were strengthened among the 18th and 19th centuries, mainly, due to the introduction of corn. The changes and transformations cannot be generalised throughout the gipuzkoan geography, so we will try to depict the geography and rate of them; the variety of situations was wide, considering that the orographic, climatic and economic conditions were diverse from the beginning.
